I love love love almond joys and this recipe is a healthier version. I got the Chocolate Covered Coconut Bars recipe from Art and The Kitchen.
The recipe calls for:
1 cup of organic coconut oil
2 cups unsweetened shredded coconut
1/4 cup of organic honey
12 ounces organic dark chocolate
Directions:
Warm coconut oil just until liquefied then add shredded coconut and honey. Combine the above ingredients.
Line shallow baking dish with parchment paper then press mixture into dish. Freeze or refrigerate until solid.
Melt chocolate and spread over coconut and enjoy.

Okay here’s the deal mine are the healthier unhealthy version because I only had sweetened coconut and nestle milk chocolate chips. So I did not use honey since the coconut was sweet enough. I also put them in a mini muffin tin like my sis-n-law did to make them bite sized treats. I topped the coconut mixture with slivered almonds to make it more like a almond joy. Then I poured the melted chocolate on top before I refrigerated them because I can’t read directions!
Yours sound better to me anyway because I prefer milk chocolate to dark chocolate! Yummm!!
